Naturally, being Superbowl Sunday tomorrow I thought I better make some wings to bring to the party. I remembered reading this article awhile back, so I thought I’d give it a try. I’ve always been a fried, not baked guy… any real man is. But this article claims you can get that same crispyness (not a real word), by allowing them to dry for 8 or more hours in the fridge, uncovered. First they’re coated in baking powder (not soda… dagnabit, need to learn to remember which is which before I go to the store… but after 2 trips, I have plenty of both now) and salt.
So here they are… ready to dry out. We’ll see how they turn out.
As for the sauce, I’m planning on using the sauce from this recipe because it’s crazy good, and it’ll do very well for a large group party. Can’t go too hot when there may be weenies around.
